Lazy day… with dinner

Today was a lazy day for me.  I slept in late, trying to catch up on sleep that I’ve missed these last several weeks.  Having slept in late, I then lazed around much of the afternoon, until around 3 pm when Kelly and I headed out to do grocery shopping.

We were supposed to go out for a birthday dinner for Denisse and I tonight.  Instead, I suggested that I make dinner and we have AJ and Denisse over and that’s just what we did.  I made two kinds of guacamole (spicy and mild) and we served that with chips.  I then made four other dishes.  There was a Spinach with Strawberry and Kiwi salad, Spanish rice, a broccoli and carrot stir-fry, and finally shrimp quesadillas.  Surprisingly, it all came out good and roughly on time.  AJ, Denisse, and Kelly seemed to enjoy it all.

AJ and Denisse hung out until around 10:30 at which point I took them back to the metro station.
